After years immersed in London’s fine dining scene, Simon brought his passion for food and hospitality to the Caribbean, where he has lived and cooked for the past 12 years. He began his island journey on Necker Island, Sir Richard Branson’s ultra-luxury private retreat, before helping to launch the Pink Sands Club Canouan as Chef de Cuisine. He eventually settled in Antigua, where he led culinary operations across four of the island’s most iconic dining destinations as Group Executive Chef. Under his leadership, these restaurants earned numerous accolades, including being voted Best Restaurant in the Caribbean multiple times.

With over two decades of experience in top-tier kitchens, Simon brings Michelin-star training and island soul to your table. Originally trained in the UK, Simon built his culinary foundation in acclaimed restaurants such as The Square, Gidleigh Park, and Pearl, working under some of the most respected chefs in the industry. His talent and dedication led to accolades such as Young Chef of the Year in 2007 and Runner-Up Chef of the Year in 2010.
